Orange Tofu
Ingredients: double for a family of four, with a little for leftovers
- 1 brick firm tofu
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup orange juice
- 1/4 cup water mixed with 1/3 cup corn starch
- 1 tsp red pepper flakes
- 1 clove garlic, minced
- 1 TBS ginger, minced
- oil of choice (coconut is my preference)
- salt & pepper to taste
- sesame seeds and chives as garnish
Press tofu and cut into 1/2 inch blocks. Toss cubes in cornstarch until coated and fry in hot oil. I usually add a generous amount of oil to a large pan, and turn the cubes every few minutes to even out each side. Once most of the cube's sides are golden brown, remove from pan and place on a paper towel to soak up excess oil.
In a small pot, add soy sauce, brown sugar, orange juice, red pepper flakes, garlic, ginger, and salt & pepper and cook on low for 5-10 minutes or until slightly sticky texture. Mix in fried tofu.
Garnish and serve with a side of rice or rice noodles. I like to have stir fried veggies or a fresh salad to complete this meal.
